Peanut Butter Collagen Bites

I first had these back in 2019 when my friend Leah made me a batch for my trek to Michigan (a seventeen hour solo road trip to my new home) and WOW! I remember calling her on the way to let her know how delicious they were and that I would definitely need the recipe. After a few iterations, they have become a staple in our home. On weeks that I KNOW life will get busy, they make the best snack and since they’re packed with nutrients, they also do a great job of keeping us filled and holding us over in between meals. Check out the recipe below.


Ingredients:

2 scoops Vital Proteins Unflavored Collagen Peptides

1 1/4 Cup Organic Rolled Oats

2 Tablespoons Chia Seeds

1/2 Cup Peanut Butter

1/3 Cup Raw Honey

1 Teaspoon Pure Vanilla Extract

1/4 Teaspoon Sea Salt

1/2 Cup Chocolate Chips

Instructions:

Mix all ingredients in a large mixing bowl. Pop the mixture into the fridge to cool for about 20 minutes. Remove and make 1-inch balls. Store in an airtight container in the fridge for up to two weeks!
